Gina’s Salad: Salmon poached with herbs and served cold with roasted garden beets, asparagus, goat cheese, toasted pecans, lettuce greens with arugula and balsamic vinaigrette

Cobb Chef Salad: herb poached turkey breast with cornichons and capers, Amish blue and Jarlsberg swiss cheese, Rock Spring Farms pepper bacon, hard boiled farm egg, julienne of ham, French green beans, roasted garden tomato and lettuce greens with avocado vinaigrette

Roasted chicken breast with lemon, garden herb butter, roasted spring vegetables and thyme chicken jus

Rock Spring Farms braised beef shoulder roast with parsley crepes, roasted garlic potato puree, carrot noodles, beef jus

Priano’s Diavolo Shrimp: jumbo shrimp, handmade strozzapreti pasta, shellfish alfredo with roasted tomato, pine nut and basil pesto

Turkey pot pie: braised turkey legs with turkey stock and herbs, carrot, celery, onions, potato, peas and bacon, homemade herb pie crust

Whole roasted chicken, black olive gremolata butter, roasted fennel, herb roasted garden tomato, fresh artichokes and mushrooms, garden potato puree

The Antipasto Sandwich: Sourdough boule with Italian meat and provolone, grilled and marinated zucchini, roasted red pepper, hard boiled farm eggs, roasted Portobello mushrooms, artichokes, herb roasted garden tomatoes, pesto and chopped homemade gardinere with olives and a salad of fire roasted peppers, onion and capers

Fresh lemon sole: wild and brown rice with sauteed carrots and celery, mushrooms, scallions, bacon and toasted almonds with roasted asparagus and citrus vinaigrette

Crab ravioli with chives, lobster sauce and roasted tomato pesto with toasted pinenuts

Italian stuffed meat loaf with braised carrot and chard, smoked prosciutto, garden marinara and farm egg fettuccine with pesto

Poached Asian shrimp salad: julienne carrot, red pepper, napa cabbage, cucumber, rice noodles with scallion and cilantro, Szechuan peanuts, pickled daikon radish and peanut lime dressing

ABOUT CHEF JEN TODD

 After receiving a BFA from Ohio University, Jen
moved to Chicago to learn the craft of fine cooking at Kendall College and then professionally at several five star kitchens in the city: Les NomadesThe Everest Room and Le Francais in Chicago and Handkes Cuisine in Columbus, Ohio.

 

Jumping at the chance to live the farm life and to expand her culinary know how, Jen moved to Granville's Rock Spring Farms to learn about food from it’s beginning: growing and nurturing a garden and then preserving it’s generous harvest.

 

Using what Jen and her husband Tori grow and

raise on the farm, she hopes to offer menus that are interesting, flavorful and familiar.
